Smashed Cucumber Salad with Garlicky Dressing
Ingredients
- 1 large English Cucumber
- 1 tsp. Sugar
- 1 tsp. Salt
- 3 tsp. Rice Vinegar
- 1 1/2 tsp. Toasted Sesame Oil
- 2 tsp. Low Sodium Soy Sauce
- 1 tsp. Peanut Oil (or other neutral oil)
- 2 Cloves of Garlic
- 1 tablespoon Toasted Sesame Seeds
- 1/4 tsp. chili flakes (use less or more to your taste)
Preparation
Slice cucumber in half and again lengthwise.
Place in a freezer bag or wrap in plastic wrap and smash with a rolling pin, a can of beans, mallet, or anything else that could work.
Chop smashed pieces into bite-size chunks.
Place a colander in a bowl.
Place cucumber in the colander and mix with sugar and salt.
Let sit in the refrigerator for 20-30 minutes to drain.
While cucumber drains, mix remaining ingredients together.
Mix together cucumber and dressing.
Add more red chili flakes to taste.
Eat right away or let sit in the fridge for a couple of hours to increase flavor.
Tips
Adjust the amount of chili flakes to suit your taste.
Make this salad ahead of time to allow the cucumbers to marinate for better flavor.
It can be enjoyed as a side dish or on its own.
