Fun and Flavorful Chinese Cucumber Salad
Ingredients
- 8-10 cucumbers
- 3 tbsp oil (sunflower or sesame)
- 4 tbsp soy sauce
- 2 tbsp rice vinegar
- 4 garlic cloves, minced
- 1 tbsp coconut sugar
- 1-2 tbsp chili flakes
- Sesame seeds
Preparation
Cut off the ends of the cucumbers.
Place a cucumber between 2 wooden chopsticks, slice the cucumber at a 45-degree angle all the way to the end, flip it, and cut in straight lines; the chopsticks will prevent the knife from cutting through completely.
Place the cucumbers in a bowl and salt them. Let them sit for 15-30 minutes until they release some moisture.
In the meantime, make the sauce by combining all the ingredients.
Rinse the cucumbers with water and top with the sauce and some sesame seeds.
