Fattoush with Green Olives
Ingredients
- 3 Arabic bread loaves
- 1/4 cup olive oil
- 1/4 cup sumac
- 1/4 cup lemon juice
- 2 garlic cloves
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cucumbers
- 3 tomatoes
- 3 radishes
- 1/2 head lettuce
- 1 cup purslane leaves
- 1 cup parsley
- 1 cup mint
- 3/4 cup green olives
Preparation
Preheat the oven to 180 degrees and prepare a wide baking sheet.
Open the bread loaf into two pieces, brush it with a little olive oil, and then sprinkle some sumac on it.
Place the bread in the oven for a few minutes to toast, let it cool, and then cut it into small pieces.
In a deep bowl, place lemon juice, garlic, oil, sumac, salt, pepper, and mix the ingredients together well.
Add cucumber, pepper, tomato, radish, lettuce, purslane, parsley, mint, and a little of the toasted bread pieces.
Gently mix all the ingredients together and then place in a serving dish.
Distribute the olives on the surface of the fattoush and garnish with pieces of bread.
