Fattoush with Green Olives

Ingredients

  • 3 Arabic bread loaves
  • 1/4 cup olive oil
  • 1/4 cup sumac
  • 1/4 cup lemon juice
  • 2 garlic cloves
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cucumbers
  • 3 tomatoes
  • 3 radishes
  • 1/2 head lettuce
  • 1 cup purslane leaves
  • 1 cup parsley
  • 1 cup mint
  • 3/4 cup green olives

Preparation

  1. Preheat the oven to 180 degrees and prepare a wide baking sheet.

  2. Open the bread loaf into two pieces, brush it with a little olive oil, and then sprinkle some sumac on it.

  3. Place the bread in the oven for a few minutes to toast, let it cool, and then cut it into small pieces.

  4. In a deep bowl, place lemon juice, garlic, oil, sumac, salt, pepper, and mix the ingredients together well.

  5. Add cucumber, pepper, tomato, radish, lettuce, purslane, parsley, mint, and a little of the toasted bread pieces.

  6. Gently mix all the ingredients together and then place in a serving dish.

  7. Distribute the olives on the surface of the fattoush and garnish with pieces of bread.
