Bulgur and Pomegranate Salad

Ingredients

  • 1 cup bulgur
  • 1 head lettuce
  • 1/2 bunch parsley
  • 10 sprigs fresh mint
  • 2 green onions
  • 3 cups pomegranate

Dressing

  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 2 tablespoons pomegranate molasses
  • 2 cloves crushed garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon crushed chili

For serving

  • 1/4 cup pine nuts
  • 1/2 cup walnut halves

Preparation

  1. Wash the bulgur well, then place it in a bowl, leave it for a few minutes to absorb all the water and double in size. Put it in the refrigerator to improve its taste.

  2. For the dressing: in a cup, put olive oil, lemon juice, pomegranate molasses, crushed garlic, salt, black pepper, and crushed chili, stir to mix.

  3. Chop the lettuce finely.

  4. Chop the parsley.

  5. Chop the mint.

  6. Chop the green onion.

  7. In a deep bowl, put the bulgur, lettuce, parsley, mint, green onion, pomegranate, and dressing, stir to mix the ingredients together.

  8. Place the salad in a serving dish then sprinkle with pine nuts and walnuts.
