Ingredients

  • 250 g whole wheat couscous
  • 1 package falafel
  • 100 g cherry tomatoes
  • 1 onion
  • 3 cloves of garlic
  • 1 red bell pepper
  • 1 can tomato cubes
  • 1 tsp ground cumin
  • 1 tbsp tamari
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh parsley

Dressing

  • 3 tablespoons plant-based yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini

Preparation

  1. Prepare the couscous by placing it in a bowl, adding boiling water according to package instructions, covering, and letting it sit for about 5 minutes until fluffy

  2. Heat the falafel balls according to package directions or prepare them if making from scratch

  3. Chop the onion, garlic, red bell pepper, and cherry tomatoes into bite-sized pieces

  4. In a small bowl, mix the dressing ingredients until smooth and creamy

  5. In a large salad bowl, combine the cooked couscous, chopped vegetables, heated falafel, and dressing, then toss gently to coat everything evenly

  6. Season with salt and pepper to taste and garnish with fresh parsley before serving
