Tomato Couscous Salad with Falafel

Ingredients

  • 250 g whole wheat couscous
  • 1 package falafel
  • 100 g cherry tomatoes
  • 1 onion
  • 3 cloves of garlic
  • 1 red bell pepper
  • 1 can tomato cubes
  • 1 tsp ground cumin
  • 1 tbsp tamari
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh parsley

Optional

  • Plant-based yogurt as a dressing

Preparation

  1. Cook the couscous according to the package instructions.

  2. Heat the falafel balls in a preheated oven or pan until golden brown.

  3. Chop the cherry tomatoes, onion, garlic, and red bell pepper into bite-sized pieces.

  4. In a small bowl, combine the canned tomato cubes, ground cumin, tamari, olive oil, salt, and pepper to make a dressing.

  5. Mix the cooked couscous, heated falafel, chopped vegetables, and dressing in a large serving bowl.

  6. Garnish with fresh parsley and add optional plant-based yogurt if desired.

  7. Serve the salad warm or at room temperature.
