Tomato Couscous Salad with Falafel
Ingredients
- 250 g whole wheat couscous
- 1 package falafel
- 100 g cherry tomatoes
- 1 onion
- 3 cloves of garlic
- 1 red bell pepper
- 1 can tomato cubes
- 1 tsp ground cumin
- 1 tbsp tamari
- 2 tbsp olive oil
- Salt and pepper
- Fresh parsley
Optional
- Plant-based yogurt as a dressing
Preparation
Cook the couscous according to the package instructions.
Heat the falafel balls in a preheated oven or pan until golden brown.
Chop the cherry tomatoes, onion, garlic, and red bell pepper into bite-sized pieces.
In a small bowl, combine the canned tomato cubes, ground cumin, tamari, olive oil, salt, and pepper to make a dressing.
Mix the cooked couscous, heated falafel, chopped vegetables, and dressing in a large serving bowl.
Garnish with fresh parsley and add optional plant-based yogurt if desired.
Serve the salad warm or at room temperature.
