Quick Chimichurri-Inspired Herb Sauce

Ingredients

  • 1 bunch flat leaf parsley (remove the stalks if you prefer, I kept them. I used the smaller packets of parsley you buy from supermarkets so if you use the fresh bunches you may only need half)
  • 3 cloves of garlic
  • 1 green chilli
  • 1 tbsp dried oregano (use fresh if you have it to hand)
  • vinegar, as needed (I used rice vinegar and used about 3 tbsp)
  • olive oil, as needed (I eyeballed this and used a generous glug)
  • salt, to taste
  • 1/4 onion, white or red
  • 1/4 red bell pepper
  • 1 tsp Pul Biber (optional)

Preparation

  1. Place all of the ingredients minus the pul biber into a food processor and pulse until blitzed, alternatively chop all the ingredients finely by hand. You may need to do this in stages and add some vinegar and olive oil to it initially to get the ingredients processing.

  2. Place the blitzed ingredients into a bowl and add more olive oil and vinegar to taste, add pul biber and more salt if necessary.

  3. Leave this to sit for half an hour before serving, the flavours mix together and taste better.

  1. Delicious over grilled meats, kebabs, doner, samosas and so much more. Enjoy!
