Waste-Free Carrot Top Pesto
Ingredients
- 1/2 bunch of carrot tops
- 100 g cashews
- 1 Tbsp lemon juice (freshly-squeezed)
- 4 Tbsp olive oil
- 1/2 tsp salt
- Pepper to taste
Preparation
Boil cashews in a saucepan with water for 20 minutes or soak for 4 hours.
Wash the carrot greens.
Mix with all ingredients.
Puree in a food processor until desired consistency is reached.

Drizzle this pesto over roasted carrots for a tasty waste-free dish.
