Waste-Free Carrot Top Pesto

Ingredients

  • 1/2 bunch of carrot tops
  • 100 g cashews
  • 1 Tbsp lemon juice (freshly-squeezed)
  • 4 Tbsp olive oil
  • 1/2 tsp salt
  • Pepper to taste

Preparation

  1. Boil cashews in a saucepan with water for 20 minutes or soak for 4 hours.

  2. Wash the carrot greens.

  3. Mix with all ingredients.

  4. Puree in a food processor until desired consistency is reached.
