Creamy Cashew Caesar Dressing

Ingredients

  • 1 cup cashews
  • 1/2 cup cold water
  • 3-5 cloves garlic
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp maldon flaked sea salt
  • cracked black pepper
  • 1/2 tbsp nutritional yeast (optional)
  • 1-2 tbsp grated vegan parmesan (optional)

Preparation

  1. Soak the cashews overnight in the refrigerator or in boiling water for 20 minutes.

  2. Drain the cashews.

  3. Blend all ingredients together until smooth, adding more water if a thinner dressing is desired.

  4. Chill in the refrigerator until ready to use.

Tips

  1. If you want to serve the dressing immediately, soak the cashews ahead of time to avoid it being warm.
