Creamy Cashew Caesar Dressing

Ingredients

  • 1 cup cashews (soaked overnight or for 20 mins in boiling water, then drained)
  • 1/2 cup cold water (add more for a thinner dressing)
  • 3-5 cloves garlic
  • 3 tbsp lemon juice (approx. 1 lemon)
  • 2 tbsp olive oil
  • 1 tsp maldon flaked sea salt
  • cracked black pepper
  • 1/2 tbsp nutritional yeast (optional)
  • 1-2 tbsp grated vegan parmesan (optional)

Preparation

  1. Soak the cashews overnight in the fridge or in boiling water for 20 minutes.

  2. Drain the cashews and blend all ingredients together until smooth.

  3. Chill the dressing in the fridge until ready to use.

Notes

  1. For best results when serving immediately, soak cashews ahead of time to avoid a warm dressing.
