Creamy Vegan Cashew Caesar Dressing

Ingredients

  • 1 cup cashews
  • 1/2 cup cold water
  • 3-5 cloves garlic
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp maldon flaked sea salt
  • cracked black pepper
  • 1/2 tbsp nutritional yeast (optional)
  • 1-2 tbsp grated vegan parmesan (optional)

Preparation

  1. Soak cashews overnight in the fridge or in boiling water for 20 minutes

  2. Drain cashews and blend with the remaining ingredients until smooth

  3. Chill in the refrigerator until ready to use

Tips

  1. If using boiling water to soak, the dressing will be warm and must be chilled before serving

  2. Add more water for a thinner dressing
