Garden Peas Pesto Pasta with Chegan Cheese
Ingredients
For the pesto
- 3 cups Basil
- 2 cloves Garlic
- 1/2 Lemon juice
- 2 tbsp Nutritional yeast
- Salt and pepper
- 1/4 cup Olive oil
- 1/2 cup Pine nuts
- 1/4 cup cooked garden peas
- 1/4 cup vegan Parmesan
For the pasta
- 1 packet green peas pasta
- 1 block Chegan cheese
Preparation
In a food processor, mix all the pesto ingredients (basil, garlic, lemon juice, nutritional yeast, salt, pepper, olive oil, pine nuts, cooked garden peas, and vegan Parmesan) until creamy.
Cook the green peas pasta according to the package instructions.
Mix the cooked pasta with the garden peas pesto and add in cubes of Chegan cheese. If the sauce is too thick, you can add some pasta water to adjust the consistency.
