Vegan Creamy Cashew Caesar Dressing

Ingredients

  • 1 cup cashews, soaked overnight or for 20 minutes in boiling water then drained
  • 1/2 cup cold water, plus more as needed for thinning
  • 3-5 cloves garlic
  • 3 tbsp lemon juice (about 1 lemon)
  • 2 tbsp olive oil
  • 1 tsp Maldon flaked sea salt
  • Cracked black pepper, to taste
  • 1/2 tbsp nutritional yeast (optional)
  • 1-2 tbsp grated vegan parmesan (optional)

Preparation

  1. Soak cashews in the refrigerator overnight or in boiling water for 20 minutes

  2. Drain the soaked cashews

  3. Blend the drained cashews with the remaining ingredients until smooth

  4. Chill the dressing in the refrigerator until ready to use

Tips

  1. If using the quick soak method, the dressing will be warm and must be chilled before serving. For immediate serving, soak the cashews overnight.
