Homemade Vegan Tahini Basil Pesto

Ingredients

  • 2 cups basil
  • Juice of one lemon
  • 3 tbsp pumpkin seeds
  • 1/4 cup tahini
  • 5 cloves garlic, crushed
  • 3 tbsp nutritional yeast
  • 1/4 cup cold water or more for preference
  • Salt to taste

Preparation

  1. Place all ingredients in a food processor and blitz on high until mostly smooth

  2. Adjust consistency based on preference by adding additional water a tablespoon at a time and continue blitzing until satisfied

Notes

  1. Nutritional yeast gives a slight cheesy umami flavor

  2. Can be drizzled over a bowl with beans, broccoli, greens, mushrooms, and quinoa
