Vegan Avocado Basil Pesto

Ingredients

  • Half of a ripe avocado
  • Handful of spinach leaves (washed)
  • Handful of fresh basil leaves
  • 1 clove of minced garlic
  • Juice of half a lemon
  • 30g of walnuts
  • 2-3 tablespoons nutritional yeast
  • Salt and pepper to taste

Optional additions

  • Onions (to taste)

Preparation

  1. Mix all the ingredients in a blender.

  2. Blend until smooth.

  3. If the consistency is not pesto-like, add a bit of water and blend again.

Tips

  1. You can add more ingredients to make it even more delicious.

  2. Use the sauce to make pesto pasta or as a vegan meal idea.
