Quick Carrot Top Pesto

Ingredients

  • Bunch of carrot tops
  • 50g nuts or seeds, toasted
  • 1-2 garlic cloves
  • 4 tbsp olive oil
  • 2-3 tbsp nutritional yeast
  • Salt
  • Black pepper

Preparation

  1. Blend all ingredients together until smooth and creamy

  2. If too thick, add a splash of pasta water until it reaches the desired consistency

Tips

  1. Be sure to give a good wash and rinse to the carrot tops

  2. Keeps well in a sealed jar in the fridge
