Quick Carrot Top Pesto
Ingredients
- Bunch of carrot tops
- 50g nuts or seeds, toasted
- 1-2 garlic cloves
- 4 tbsp olive oil
- 2-3 tbsp nutritional yeast
- Salt
- Black pepper
Preparation
Blend all ingredients together until smooth and creamy
If too thick, add a splash of pasta water until it reaches the desired consistency
Tips
Be sure to give a good wash and rinse to the carrot tops
Keeps well in a sealed jar in the fridge
