Vegan Zucchini Noodles with Pesto
Ingredients
- 2 medium zucchinis
- 1 cup basil leaves
- 1/4 cup pine nuts
- 1/4 cup nutritional yeast
- 2 cloves garlic
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- salt
- pepper
Preparation
Spiralize the zucchinis to create noodles
In a food processor, blend the basil leaves, pine nuts, garlic, nutritional yeast, olive oil, and lemon juice until smooth to make the pesto
Season the pesto with salt and pepper to taste
Toss the zucchini noodles with the pesto and serve immediately
