Fresh Pesto Delights
Ingredients
- 2 cups Basil Leaves
- 1/3 cup Pine Nuts, lightly toasted
- 1/2 - 3/4 cup grated Follow Your Heart Parmesan
- 2 cloves of Garlic
- 2 tbsp Lemon Juice
- 1/4 - 1/3 cup Olive Oil
- Salt & Pepper to taste
Preparation
In a food processor, combine basil leaves, lightly toasted pine nuts, grated Parmesan, garlic cloves, lemon juice, salt, and pepper.
Pulse the ingredients until they are well minced.
With the processor running, slowly add olive oil, starting with 1/4 cup, until the mixture reaches a loose but paste-like consistency.
Transfer the pesto to a container and store it in the refrigerator for up to a week.
