Couscous Salad with Chickpeas and Vegetables
Ingredients
- Couscous
- 1 can chickpeas
- Cherry tomatoes
- Kalamata olives
- Cucumbers
- Yellow bell peppers
- Dried parsley
- Olive oil
- Salt
Preparation
Cook the couscous according to the package instructions.
Transfer the cooked couscous to a large bowl.
Drain and rinse the chickpeas and add them to the bowl.
Chop the cucumbers and yellow bell peppers.
Add the chopped cucumbers, yellow bell peppers, cherry tomatoes, and kalamata olives to the bowl.
Garnish with dried parsley.
Drizzle with olive oil and add a dash of salt.
Tips
Fresh parsley can be used instead of dried for enhanced flavor.
This salad is delicious without any additional dressing.
