Couscous Salad with Chickpeas and Veggies

Ingredients

  • Couscous
  • 1 can chickpeas
  • Cherry tomatoes
  • Kalamata olives
  • Cucumbers
  • Yellow bell peppers
  • Dried parsley
  • Olive oil
  • Salt

Preparation

  1. Cook the couscous according to the package instructions.

  2. Transfer the cooked couscous to a large bowl.

  3. Add the drained and rinsed chickpeas, cherry tomatoes, kalamata olives, chopped cucumbers, and yellow bell peppers.

  4. Garnish with dried parsley.

  5. Drizzle with olive oil and add a dash of salt.

Tips

  1. Fresh parsley can be used instead of dried for better flavor.
