Couscous Salad with Chickpeas and Veggies
Ingredients
- Couscous
- 1 can chickpeas
- Cherry tomatoes
- Kalamata olives
- Cucumbers
- Yellow bell peppers
- Dried parsley
- Olive oil
- Salt
Preparation
Cook the couscous according to the package instructions.
Transfer the cooked couscous to a large bowl.
Add the drained and rinsed chickpeas, cherry tomatoes, kalamata olives, chopped cucumbers, and yellow bell peppers.
Garnish with dried parsley.
Drizzle with olive oil and add a dash of salt.
Tips
Fresh parsley can be used instead of dried for better flavor.
This salad is delicious without dressing, but you can add one if desired.
