Vegan Couscous Salad with Chickpeas and Veggies
Ingredients
- Couscous
- 1 can chickpeas
- Cherry tomatoes
- Kalamata olives
- Cucumbers (chopped)
- Yellow bell peppers
- Dried parsley
- Olive oil
- Salt
Preparation
Cook the couscous according to the package instructions.
Place the cooked couscous in a large bowl.
Add drained and rinsed chickpeas to the bowl.
Add cherry tomatoes to the bowl.
Add kalamata olives to the bowl.
Chop the cucumbers and add them to the bowl.
Add yellow bell peppers to the bowl.
Garnish with dried parsley.
Drizzle with olive oil and add a dash of salt.
Serve and enjoy.
Notes
Fresh parsley can be used instead of dried for better flavor.
No additional dressing is needed, as olive oil and salt provide sufficient seasoning.
