Arugula Salad with Cheese Balls

Ingredients

  • 150 grams cheese
  • 1 tablespoon dried mint
  • 2 bunches arugula
  • 1/2 head lettuce, chopped
  • 10 leaves fresh mint
  • 20 small tomatoes, halved
  • 1/4 cup lemon juice
  • 2 tablespoons balsamic vinegar or white vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano or mint

Preparation

  1. In a small bowl, place the cheese and mint, mash well until smooth, then shape into balls by kneading small amounts between your palms.

  2. Place arugula, lettuce, fresh mint, and tomatoes in a deep salad bowl.

  3. In a cup, combine lemon juice, vinegar, olive oil, salt, pepper, garlic powder, and oregano, and stir with a fork until well mixed.

  4. Top the salad with cheese balls, drizzle with the dressing, and serve immediately.
