Arugula Salad with Cheese Balls
Ingredients
- 150 grams cheese
- 1 tablespoon dried mint
- 2 bunches arugula
- 1/2 head lettuce, chopped
- 10 leaves fresh mint
- 20 small tomatoes, halved
- 1/4 cup lemon juice
- 2 tablespoons balsamic vinegar or white vinegar
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon oregano or mint
Preparation
In a small bowl, place the cheese and mint, mash well until smooth, then shape into balls by kneading small amounts between your palms.
Place arugula, lettuce, fresh mint, and tomatoes in a deep salad bowl.
In a cup, combine lemon juice, vinegar, olive oil, salt, pepper, garlic powder, and oregano, and stir with a fork until well mixed.
Top the salad with cheese balls, drizzle with the dressing, and serve immediately.
