Quinoa Salad with Beet Yogurt Sauce
Ingredients
Quinoa
- 1 cup quinoa
- 2 cups water
- 1 teaspoon olive oil
- 1/2 teaspoon salt
Sauce
- 1 cup yogurt
- 1 medium beet
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon oregano
Vegetables
- Assortment of vegetables and greens
Preparation
Cook the quinoa with water, olive oil, and salt until tender and water is absorbed.
Prepare the sauce by mixing yogurt, beet, lemon juice, olive oil, paprika, garlic powder, onion powder, salt, black pepper, and oregano until well combined.
Assemble the salad by combining the cooked quinoa, sauce, and a variety of fresh vegetables and greens.
