Quinoa with Vegetables and Yogurt Sauce
Ingredients
Quinoa
- 1 cup quinoa
- 2 cups water
- 1 teaspoon olive oil
- 1/2 teaspoon salt
Sauce
- 170g Alrawabi yogurt
- 1 medium red bell pepper
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon oregano
For serving
- Assorted vegetables and greens
Preparation
Wash the quinoa in a strainer with cold water, stirring several times.
Place it in a pot, add water and salt, bring to a boil over medium heat, then reduce heat, cover, and let it cook until done. Fluff with a fork and let it cool.
For the sauce, in a food processor, combine Alrawabi yogurt, red bell pepper, lemon juice, olive oil, paprika, garlic powder, onion powder, salt, black pepper, and oregano, and blend until smooth.
In a serving dish, place the quinoa and vegetables, then drizzle the sauce over it.
