Quinoa with Vegetables and Yogurt Sauce

Ingredients

Quinoa

  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt

Sauce

  • 170g Alrawabi yogurt
  • 1 medium red bell pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon oregano

For serving

  • Assorted vegetables and greens

Preparation

  1. Wash the quinoa in a strainer with cold water, stirring several times.

  2. Place it in a pot, add water and salt, bring to a boil over medium heat, then reduce heat, cover, and let it cook until done. Fluff with a fork and let it cool.

  3. For the sauce, in a food processor, combine Alrawabi yogurt, red bell pepper, lemon juice, olive oil, paprika, garlic powder, onion powder, salt, black pepper, and oregano, and blend until smooth.

  4. In a serving dish, place the quinoa and vegetables, then drizzle the sauce over it.

Notes
