Beet Salad with Yogurt Sauce

Ingredients

Salad

  • 2 large cooked beets, cubed
  • 1 cup cooked corn
  • 1 small onion, finely chopped

For serving

  • Lettuce leaves

Yogurt sauce

  • 1 cup yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon vinegar

Preparation

  1. In a deep serving dish, place the lettuce and spread the beets, corn, and onion.

  2. For the sauce, in a deep bowl, place the yogurt, mayonnaise, salt, pepper, lemon juice, and vinegar. Use a hand whisk to mix for a minute until homogeneous.

  3. Spread the sauce over the salad and serve immediately.
