Beet Salad with Yogurt Sauce
Ingredients
Salad
- 2 large cooked beets, cubed
- 1 cup cooked corn
- 1 small onion, finely chopped
For serving
- Lettuce leaves
Yogurt sauce
- 1 cup yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon lemon juice
- 1 tablespoon vinegar
Preparation
In a deep serving dish, place the lettuce and spread the beets, corn, and onion.
For the sauce, in a deep bowl, place the yogurt, mayonnaise, salt, pepper, lemon juice, and vinegar. Use a hand whisk to mix for a minute until homogeneous.
Spread the sauce over the salad and serve immediately.
