Macaroni Salad with Corn
Ingredients
- 200 grams macaroni
- 1/4 cup grated Parmesan cheese
- 1 cup boiled corn
- 1 medium sweet red pepper, chopped
- 1 medium sweet green pepper, chopped
- 1 cup chopped cabbage
- 1 cup grated carrot
Ketchup sauce
- 1/4 cup ketchup
- 2 tablespoons mayonnaise
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1/8 teaspoon black pepper
Preparation
In a deep pot, add a generous amount of water, a tablespoon of salt, and a tablespoon of corn oil, then place on medium heat until the water boils strongly.
Add the macaroni and cook for 10 minutes, then drain and place in a deep dish.
Add the grated Parmesan cheese to the macaroni and stir with a wooden spoon to mix, then let it cool completely.
In a wide serving dish, place the macaroni and layer the boiled corn, chopped sweet red pepper, chopped sweet green pepper, chopped cabbage, and grated carrot on top.
For the ketchup sauce, in a deep dish, combine the ketchup, mayonnaise, sugar, vinegar, salt, and black pepper, and whisk with a hand whisk until a smooth sauce forms.
Pour the ketchup sauce over the salad and serve.
