Mixed Vegetable Salad with Labneh Sauce
Ingredients
- 1 medium potato, finely chopped
- 2 cups mixed frozen vegetables
- 2 medium cucumbers, chopped
- 1 medium sweet green pepper, chopped
- 1 green onion, sliced
Sauce
- 3 tablespoons labneh
- 1/4 cup mayonnaise
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon dried mint
- 1 clove garlic, crushed
Garnish
- Black olives, sliced
Preparation
Place the potatoes in a medium-sized pot and submerge them in plenty of water.
Put the pot on medium heat and cook for 5 minutes.
Add the mixed frozen vegetables and cook for another 5 minutes.
Drain the potatoes and vegetables, then transfer to a deep dish and let cool completely.
Add the chopped green pepper and green onion to the vegetables and mix well.
In a small bowl, place labneh, mayonnaise, olive oil, salt, white pepper, dried mint, and crushed garlic.
Whisk the ingredients until smooth to form the sauce.
Spread the sauce over the vegetable mixture and stir until well combined.
Cover the salad dish with plastic wrap and refrigerate for several hours or overnight.
Place the salad in a large serving dish, sprinkle with sliced black olives, and serve.
