Fried Zucchini Salad with Yogurt and Tahini

Ingredients

  • 4 large zucchini
  • 1 cup yogurt
  • 1/4 cup tahini
  • 3 cloves crushed garlic
  • 3 tablespoons lemon juice
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped parsley
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  1. Wash the zucchini well, do not peel it, and cut it into thin slices using a knife

  2. In a wide skillet, heat the oil to a height of about 2 inches

  3. Place the zucchini slices in the hot oil, use a slotted spoon to flip them until golden brown, then transfer to absorbent paper to remove excess oil

  4. In a deep plate, combine yogurt, tahini, crushed garlic, lemon juice, salt, dried mint, chopped fresh mint, chopped parsley, and black pepper; mix well with a fork

  5. In a serving dish, place the yogurt mixture

  6. Spread the fried zucchini over the yogurt in the dish

  7. Sprinkle parsley over the salad and serve
