Fried Zucchini Salad with Yogurt and Tahini
Ingredients
- 4 large zucchini
- 1 cup yogurt
- 1/4 cup tahini
- 3 cloves crushed garlic
- 3 tablespoons lemon juice
- 1/4 cup chopped fresh mint
- 1/4 cup chopped parsley
- 1 teaspoon dried mint
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preparation
Wash the zucchini well, do not peel it, and cut it into thin slices using a knife
In a wide skillet, heat the oil to a height of about 2 inches
Place the zucchini slices in the hot oil, use a slotted spoon to flip them until golden brown, then transfer to absorbent paper to remove excess oil
In a deep plate, combine yogurt, tahini, crushed garlic, lemon juice, salt, dried mint, chopped fresh mint, chopped parsley, and black pepper; mix well with a fork
In a serving dish, place the yogurt mixture
Spread the fried zucchini over the yogurt in the dish
Sprinkle parsley over the salad and serve
