Grilled Halloumi Cheese Salad
Ingredients
- 250 grams halloumi cheese
- 20 cherry tomatoes
- 1 medium sweet green pepper, cubed
- 2 tablespoons olive oil
- 2 bunches arugula
Sauce
- 4 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried mint
- 1/4 cup olive oil
Preparation
Cut the halloumi into small cubes, prepare wooden skewers, and thread the cheese, cherry tomatoes, and sweet green pepper onto them.
Brush the skewers with a little olive oil.
Heat a wide, thick-bottomed pan over medium heat until well heated.
Place the skewers on the pan and cook for 1 minute, then flip to the other side and cook until the cheese is light golden.
In a large serving dish, spread the arugula and then place the cheese skewers on top.
For the sauce, in a small jar, combine lemon juice, salt, black pepper, dried thyme, dried mint, and olive oil. Close tightly and shake vigorously to emulsify.
Pour the sauce over the salad and serve immediately.
