Baked Artichokes with Vegetables
Ingredients
- 12 medium artichokes, peeled and boiled
- 3 tablespoons olive oil
- 1/2 cup peas
- 1/2 cup chopped carrots
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/2 cup broth
- 1 teaspoon dried thyme
Preparation
Adjust the oven rack to the middle and preheat the oven to 180°C.
Prepare a medium-sized oven dish suitable for serving.
In a wide skillet, heat the oil over medium heat, add the artichokes, and stir until golden, then transfer to the oven dish.
In the same skillet, add the peas, carrots, onion, garlic, salt, and pepper, stir until golden, spread over the artichokes, and pour lemon juice, olive oil, and broth.
Place in the oven and bake for 20 minutes until the broth is absorbed.
Remove from the oven, sprinkle with dried thyme, and serve with grilled meats.
