Oven-Roasted Pigeon with Vegetables
Ingredients
- 6 pigeons
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cardamom
- 1 teaspoon mixed spices
- 2 cloves crushed garlic
- 3 tablespoons olive oil
- 6 small peeled potatoes
- 6 small peeled onions
- 2 large carrots cut into thick slices
- 1 cup broth
Preparation
Set the rack in the middle of the oven and preheat to 180°C. Prepare a suitable baking dish.
Mix salt, pepper, nutmeg, cardamom, mixed spices, and oil in a small bowl. Rub the mixture inside and out on the pigeons.
Place the pigeons in the baking dish and arrange the potatoes, onions, and carrots around them.
Add the broth and cover the dish with aluminum foil.
Bake in the oven for 40 minutes or until the pigeons are cooked.
