Oven-Roasted Pigeon with Vegetables

Ingredients

  • 6 pigeons
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom
  • 1 teaspoon mixed spices
  • 2 cloves crushed garlic
  • 3 tablespoons olive oil
  • 6 small peeled potatoes
  • 6 small peeled onions
  • 2 large carrots cut into thick slices
  • 1 cup broth

Preparation

  1. Position the wire rack in the middle of the oven, preheat the oven to 180°C, and prepare a suitable baking dish

  2. In a small bowl, place the salt, pepper, nutmeg, cardamom, mixed spices, and oil, mix the ingredients to combine, then rub the pigeon inside and out with the spice mixture

  3. Place the pigeon in the baking dish and arrange the potatoes, onions, and carrots

  4. Add the broth and cover the dish with a piece of aluminum foil

  5. Place the pigeon in the oven for 40 minutes or until the pigeon is cooked
