Baked Stuffed Zucchini with Kofte

Ingredients

  • 6 large zucchinis
  • 500 grams kofte
  • 1/4 cup tomato paste
  • 2 cups broth
  • 2 tablespoons lemon juice
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 2 tablespoons olive oil
  • Pine nuts

Preparation

  1. Heat the oven to 180°C and prepare a medium-sized baking dish.

  2. Wash the zucchini and trim the top and bottom parts.

  3. Cut the zucchini into 4 cm pieces crosswise.

  4. Using a small spoon, hollow out the zucchini pieces slightly and save the flesh.

  5. Place the zucchini flesh in the baking dish as a layer.

  6. Arrange the hollowed zucchini pieces in the dish with the hollow side up.

  7. Form the kofte into balls the size of the hollows and stuff them into the zucchini pieces.

  8. In a deep bowl, mix the broth, lemon juice, black pepper, salt, mixed spices, and olive oil.

  9. Stir the mixture well and pour it over the dish.

  10. Bake in the oven for one hour until the kofte is cooked.

  11. Remove the dish from the oven, sprinkle with pine nuts, and serve.
