Stuffed Zucchini with Kofta

Ingredients

  • 6 large zucchini
  • 500 grams kofta
  • 2.5 cups tomato paste
  • 2 cups broth
  • 2 tablespoons lemon juice
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 2 tablespoons olive oil

Preparation

  1. Heat the oven to 180°C, prepare a medium-sized baking dish

  2. Wash the zucchini, use a knife to remove the top and bottom parts of the zucchini

  3. Cut the zucchini into 4 cm pieces crosswise

  4. Using a small spoon, hollow out the zucchini pieces slightly, and keep the pulp

  5. Place the zucchini pulp in the baking dish in a layer

  6. Arrange the zucchini pieces in the dish with the hollowed side up

  7. Shape the kofta into balls the size of the hollowed parts in the zucchini pieces

  8. Place the kofta in the zucchini pieces

  9. In a deep bowl, place the broth, lemon juice, black pepper, salt, mixed spices, and olive oil

  10. Using a spoon, mix the ingredients well, and spread them in the dish

  11. Put the dish in the oven for an hour until the kofta is cooked

  12. Remove the dish from the oven, distribute the pine nuts and serve
