Oven-Baked Meat and Vegetables Tray

Ingredients

  • A little vegetable oil
  • Cubes of onion
  • Whole garlic head
  • Fresh meat with bone cut into medium pieces
  • Black pepper

Vegetables

  • Potatoes
  • Squash
  • Carrots
  • Zucchini
  • Peas

Vegetable seasoning

  • Olive oil
  • Salt
  • Black pepper
  • Paprika
  • Mixed spices

Broth and garnish

  • Boiling water or meat broth
  • Dried parsley
  • Tomato
  • Lemon
  • Additional black pepper for garnish

Preparation

  1. In the bottom of a heat-resistant tray, place a little oil, then add onion cubes and a whole garlic head

  2. Add the meat, which is fresh meat with bone cut into medium pieces

  3. Season the meat with black pepper only

  4. Cover well and bake in the oven for half an hour or until the meat is almost cooked, depending on size and number of pieces

  5. After half an hour, pour in boiling water or meat broth

  6. Add the vegetable pieces, seasoned with olive oil, salt, black pepper, paprika, and mixed spices

  7. Cover and bake for another half hour

  8. Uncover towards the end of cooking to allow browning

  9. Garnish with dried parsley, tomato, lemon, and a sprinkle of black pepper

  10. Serve with white rice or bread

Tips

  1. Substitute the meat with chicken if desired

  2. Add any additional vegetables you like
