Baked Potato and Meat Casserole
Ingredients
Meat
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 2 cloves garlic
- 2 green bell peppers, chopped
- 400 grams ground meat
- 1 large tomato, chopped
- 1 medium red bell pepper
- 2 cups mushrooms, chopped
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 1 teaspoon mixed spices
- 1 teaspoon paprika
- 2 tablespoons tomato paste
- 1/2 cup parsley, chopped
Potatoes
- 4 large potatoes
- 1 tablespoon salt
- 2 cloves garlic, halved
- 2 bay leaves
- 4 tablespoons butter
Preparation
Heat the oven to 180°C. Prepare a loaf pan and line it with parchment paper on the bottom and sides. Set aside.
For the meat: In a skillet, heat the oil, add the onion, garlic, and green pepper, and stir until wilted, then add the meat and stir until fully cooked.
Add the tomato, mushrooms, salt, pepper, mixed spices, paprika, and stir until the mushrooms wilt.
Add the tomato paste, parsley, and half a cup of water, then let the meat simmer on low heat until well-cooked.
For the potatoes: Peel the potatoes, cut them into large cubes, place in a pot, cover with water, add salt, garlic halves, and bay leaves, bring to a boil, then reduce heat and cook until tender. Drain and discard the garlic and bay leaves.
In a bowl, place the potatoes, add butter and some salt, and mash them with a potato masher while hot.
Place half of the potato mixture in the prepared pan and level it to make an even layer.
Add the meat filling and level it to make an even layer.
Add the remaining potato mixture and level it well.
Bake in the oven until golden brown. Let it cool slightly, then remove from the pan and place on a serving dish.
