Roast Beef with Potato Puree
Ingredients
- 2 kg beef roast
- 6 cloves garlic
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cumin
- 3 bay leaves
- 4 cardamom pods
- 2 teaspoons ground mastic
- 2 onions, chopped
- 6 cloves garlic, chopped
- 1 green bell pepper
- 1 large carrot, thick slices
- 2 medium potatoes, cut into thick fingers
- 1/4 cup corn oil
- 1 cup water
Garnish
- Chopped parsley
- Paprika
Preparation
Set the rack in the middle of the oven and preheat to 180°C. Prepare a 13x9 baking dish and cotton string.
Using a sharp knife, make deep holes in the meat and insert the garlic cloves.
In a small bowl, mix salt, pepper, and cumin; rub onto the meat.
Tie the meat with string to maintain its shape.
Place the meat in the baking dish. Add bay leaves, cardamom, mastic, onions, garlic, bell pepper, carrot, potatoes, oil, and water. Cover with aluminum foil.
Bake in the oven for 3 hours or until the meat is done.
Remove the string using a sharp knife and place the roast and vegetables on a serving dish.
Mash the cooked potatoes to create a puree.
Put the potato puree in a piping bag and garnish the roast with it. Sprinkle with parsley and paprika.
