Arabic Spiced Beef Stew
Ingredients
- 1/2 teaspoon ground mastic
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon cardamom
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 1 tablespoon salt
- 3 bay leaves
- 5 cardamom pods
- 1 piece beef thigh meat
- 1 medium onion, quartered
- 1 tablespoon sugar
- 1 medium tomato, quartered
For sautéing
- 1 tablespoon ghee
- 1 medium onion, julienned
- 4 cloves garlic, crushed
- 2 green bell peppers, chopped
- 1 large red bell pepper, cut into small slices
Preparation
In a dish, place the mastic, cardamom, cumin, coriander, paprika, salt and pepper, and mix to combine
In a pot, heat the ghee, add the meat and stir several times until golden brown
Sprinkle half the amount of spices and sprinkle sugar on the meat, then continue sautéing
Add bay leaves, cardamom pods, onion, tomato and continue sautéing
Cover the meat with boiling water, cover the pot and let it cook
Remove the meat, let it cool, and cut into cubes as desired
In a skillet, heat the ghee, add onion, garlic, peppers, and sauté lightly
Add the meat, sprinkle the remaining spices, sauté until it gets a nice color, then serve
