Baked Chicken Kofta with Cheese Topping

Ingredients

  • 4 large chicken fillets
  • 2 tablespoons flour
  • 1 teaspoon chicken spices
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon crushed chili
  • 1/4 cup mayonnaise
  • 1 large egg
  • 2 medium onions, finely chopped
  • 3 cloves garlic, crushed

Top layer

  • 2 medium onions, sliced
  • 2 cups sliced mushrooms
  • 4 medium tomatoes, sliced
  • 1 cup mozzarella cheese
  • 1 cup cheddar cheese
  • 2 tablespoons dried basil
  • 1/4 cup Romano or Parmesan cheese

Preparation

  1. Chop the chicken into very small cubes and place in a deep bowl, then add flour, chicken spices, salt, black pepper, paprika, crushed chili, mayonnaise, egg, finely chopped onions, and crushed garlic, and mix with a wide plastic spoon to form a homogeneous kofta mixture.

  2. Prepare an oven-safe dish suitable for serving.

  3. Heat 1/4 cup corn oil in a deep skillet over medium heat.

  4. Shape the mixture into discs and fry in hot oil until golden on both sides, then transfer to the oven dish and repeat with the remaining mixture.

  5. For the top layer, in the same skillet, stir onions until softened, add mushrooms and stir for 1 to 2 minutes, then spread the mixture over the kofta discs, add tomato slices, and sprinkle with mozzarella cheese, cheddar cheese, dried basil, and Romano or Parmesan cheese.

  6. Position the oven rack in the middle and preheat the oven to 180°C.

  7. Bake in the oven for 30 minutes until the kofta is cooked and the cheese is melted.
