Carrot and Pumpkin Soup

Ingredients

  • 4 large carrots
  • 1 kg pumpkin
  • 3 tablespoons olive oil
  • 4 cloves garlic, halved
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 2 cups broth

Preparation

  1. Peel the pumpkin and cut it into large pieces.

  2. Peel the carrots and cut them into large pieces.

  3. In a large pot, heat the olive oil.

  4. Add the pumpkin and garlic, stir for a few minutes then add the carrots and stir for a few minutes to gain good flavor.

  5. Add the pepper and cumin and continue stirring to brown the pumpkin and carrots well.

  6. Add the broth or water, cover the pot and leave it on medium heat for about 30 minutes until the pumpkin and carrots are fully cooked.

  7. In a blender or electric grinder, blend the mixture to get a smooth soup.

  8. Reheat the soup and serve it.
