Baked Chicken with Mixed Vegetables
Ingredients
- 1.5 kg chicken
- 2 large grated onions
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- 1 teaspoon mixed spices
- 3 cups peas
- 3 large sliced carrots
- 3 large sliced potatoes
- 2 green bell peppers
- 3 tablespoons ghee
Preparation
Cut the chicken into halves. Prepare a baking dish or tray and set it aside.
In a bowl, place the onion, add the spices, cinnamon, salt, black pepper, and mix well.
In the baking dish, place the carrots, peas, potatoes, green pepper.
Spread half of the onion mixture over the chicken and between the skin and meat. Place the chicken on top of the vegetables in the dish.
Add chicken broth to the remaining onion mixture and spread it over the vegetables and chicken. Spread the ghee over the surface of the chicken.
Cover the dish with aluminum foil, place it in the oven at 180°C for one hour or until the chicken is cooked.
