Layered Power Salad in a Jar

Ingredients

Dressing

  • extra virgin olive oil
  • honey
  • Dijon mustard
  • fresh lemon
  • black pepper
  • salt

Protein and carbs

  • boiled chickpeas
  • boiled corn
  • boiled barley

Hard vegetables

  • carrot
  • cabbage
  • boiled beetroot
  • capsicum

Top vegetables

  • cucumber
  • tomatoes
  • salad leaves

Nuts

  • almond flakes

Preparation

  1. Mix the dressing ingredients together in a bowl.

  2. Pour the dressing into the bottom of a jar.

  3. Add the protein and carbs layer on top of the dressing.

  4. Layer the hard vegetables next.

  5. Add the vegetables with high water content on top.

  6. Sprinkle nuts over the top layer.

  7. Seal the jar tightly to make it airtight.

Serving

  1. If using a square or flat bowl, simply open and eat directly.

  2. If using a jar, empty the contents upside down into a bowl before eating.
