Macaroni Salad with Corn
Ingredients
- 200 grams macaroni
- 1/4 cup grated Parmesan cheese
- 1 cup cooked corn
- 1 medium chopped sweet red bell pepper
- 1 medium chopped sweet green bell pepper
- 1 cup chopped cabbage
- 1 cup grated carrot
Ketchup sauce
- 1/4 cup ketchup
- 2 tablespoons mayonnaise
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1/8 teaspoon black pepper
Preparation
In a deep pot, place a generous amount of water, add one tablespoon of salt and one tablespoon of corn oil, and place the pot on medium heat until the water boils strongly.
Add the macaroni and let it cook for 10 minutes.
Drain the macaroni and place it in a deep dish.
Add the cheese to the macaroni.
Using a wooden spoon, stir the macaroni to mix with the cheese.
Let the macaroni cool completely.
In a wide serving dish, place the macaroni.
Spread the corn, peppers, cabbage, and carrot in layers over the macaroni.
In a deep dish, combine ketchup, mayonnaise, sugar, vinegar, salt, and pepper.
Using a hand whisk, stir the ingredients until a smooth sauce forms.
Spread the ketchup sauce over the salad and serve.
