Brown Lentil Salad with Akawi Cheese

Ingredients

  • 2 cups brown lentils
  • 20 small tomatoes
  • 1 cup chopped parsley
  • 2 green onions chopped with green leaves
  • 1 head chopped lettuce
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1/2 teaspoon black pepper
  • 200 grams akawi cheese
  • 2 teaspoons za'atar with sesame

Preparation

  1. In a pot, place the lentils and cover with water, cover the pot and cook on medium heat until tender

  2. Drain the lentils and chill in the refrigerator until cold

  3. Place the lentils in a bowl, add the cumin, salt, black pepper, lemon juice, parsley, and green onion

  4. Add the olive oil and mix the ingredients to blend the flavors

  5. In a dish, place the chopped lettuce, then add the lentils on top

  6. Cut the cheese into rectangular or cubed pieces and spread it over the lentils

  7. Cut the tomatoes as desired and spread them over the salad

  8. Sprinkle the za'atar over the salad, garnish with some parsley, and serve

Tips

  1. The lentil mixture can be prepared in advance by several hours or the day before
