Quick Microwave Quinoa Preparation

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • A drizzle of olive oil

Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 25 grams coriander leaves, finely chopped
  • Salt and pepper to taste

Preparation

  1. Place the quinoa, oil and water in a large microwaveable glass bowl, stir and then cover it with a heavy plate.

  2. Microwave on high for 10 minutes.

  3. After microwaving, remove the bowl from the microwave and let it remain covered for 5 minutes.

  4. Finally, uncover the bowl, fluff up the quinoa, and use it as needed in your recipe.

  5. To make the dressing, mix all the dressing ingredients together or blend.

  6. Pan fry the salmon or Halloumi for a vegetarian option and drizzle over.

  7. Add pan sautéed courgette, broccoli and French beans to the quinoa.
