Quinoa Salad with Cherry Tomatoes and Broccoli
Ingredients
- 3/4 cup uncooked quinoa
- 3 cups chopped fresh broccoli florets
- 1 cup cherry tomatoes
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 1 teaspoon chili flakes
- 1 teaspoon sugar
- 1 tablespoon olive oil
Dressing
- 1 tablespoon tahini
- 1 teaspoon lemon juice
- 1 tablespoon maple syrup
- Pinch of salt
- 1 garlic clove
- Water
Preparation
Cook quinoa following packaging instructions.
Cut broccoli and tomatoes, drizzle with olive oil and sprinkle with salt, garlic powder, chili flakes. Add sugar to tomatoes only.
Bake for 25 to 30 minutes at 400°F.
Mix quinoa with vegetables and serve with tahini dressing.

Mix all the ingredients together.
