Fried Potatoes with Coriander and Peppers
Ingredients
- 4 large potatoes, cut into small cubes
- 2 tablespoons olive oil
- 5 cloves garlic, crushed
- 1 small green pepper, finely chopped
- 1 teaspoon ground coriander
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup chopped coriander
For frying
- Corn oil (as needed for deep frying)
Preparation
In a deep skillet, add an amount of corn oil sufficient for frying.
Place the skillet on medium heat until the oil is hot.
Fry the potato cubes until golden brown.
In a wide skillet, add the olive oil and heat it.
Add the potatoes to the garlic and stir gently.
Remove the skillet from heat and add the chopped coriander.
In a serving dish, pour the potatoes with coriander and serve.
