Fried Potatoes with Coriander and Peppers

Ingredients

  • 4 large potatoes, cut into small cubes
  • 2 tablespoons olive oil
  • 5 cloves garlic, crushed
  • 1 small green pepper, finely chopped
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup chopped coriander

For frying

  • Corn oil (as needed for deep frying)

Preparation

  1. In a deep skillet, add an amount of corn oil sufficient for frying.

  2. Place the skillet on medium heat until the oil is hot.

  3. Fry the potato cubes until golden brown.

  4. In a wide skillet, add the olive oil and heat it.

  5. Add the potatoes to the garlic and stir gently.

  6. Remove the skillet from heat and add the chopped coriander.

  7. In a serving dish, pour the potatoes with coriander and serve.
