Fried Zucchini Fingers

Ingredients

  • 3 large zucchinis
  • 1 cup flour

Egg mixture

  • 1 large egg
  • 1 large egg white
  • 1 teaspoon vinegar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon black pepper

Breadcrumb mixture

  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons chopped parsley
  • 1 clove minced garlic

Preparation

  1. Using a sharp knife, cut the zucchini into thin fingers.

  2. In a wide plate, place the flour.

  3. For the egg mixture: In a deep plate, place the egg, egg white, vinegar, water, 1/2 teaspoon salt, a little cinnamon and pepper. Using a hand whisk, mix the egg to combine.

  4. For the breadcrumb mixture: In a wide plate, place the breadcrumbs, cheese, parsley, garlic, the rest of the salt, cinnamon and pepper. Using a fork, mix the breadcrumbs with the other ingredients.

  5. In a deep frying pan, place an amount of oil about 2 inches high. Place the pan on medium heat to heat the oil well.

  6. Take a zucchini finger, coat it in flour and turn until fully covered. Then place in egg mixture and turn until fully covered, then in breadcrumb mixture. Turn to coat well with breadcrumbs. Dip again in egg and then in breadcrumbs to make a thick layer.

  7. Place the zucchini finger in the oil. Repeat with remaining fingers in batches. Using a slotted spoon, turn until golden brown.

Serving suggestions

  1. Serve fried zucchini fingers with fried chicken or fried fish.
