Potato Patties with Cheese Filling

Ingredients

  • 2 large potatoes
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon soft butter
  • 1 large egg
  • 1 tablespoon chopped green onions
  • Flour, as needed for coating

Filling

  • 2 tablespoons cream cheese
  • 1/4 cup shredded cheddar cheese

For frying

  • 2 tablespoons butter

Preparation

  1. Place the potatoes in a large pot, add a tablespoon of salt, cover with water, and cook over medium heat until tender, then peel them.

  2. Mash the warm potatoes using a potato masher and let them cool.

  3. Add salt, black pepper, nutmeg, cheddar cheese, butter, and egg to the mashed potatoes, mix well, and refrigerate for about an hour to firm up.

  4. Sprinkle flour on a work surface.

  5. Place the potato mixture on the floured surface, add the chopped green onions, mix them in, and shape into a wide cylinder while coating with flour.

  6. Continue to coat with flour until it holds together and forms a wide cylinder.

  7. Cut into four or five pieces with a knife, then sprinkle more flour and shape each piece into a thick round disc, about an inch or slightly more thick.

  8. Heat butter in a skillet and add the potato discs, cook for about 2 minutes until the bottom is golden brown, then carefully flip to the other side.

  9. Transfer the potato discs to a wide baking sheet and make a small indentation in the center of each.

  10. Place a little cream cheese in the indentation and sprinkle some cheddar cheese on top.

  11. Preheat the broiler, place the baking sheet under the broiler for a few minutes until the cheese melts, then serve hot.

Tips

  1. Alternatively, instead of melting the cheese in the oven, cover the skillet and let it sit for a few minutes to melt the cheese.
