Cheesy Bacon Potato Stacks

Ingredients

  • 9 slices thin bacon
  • 2 pounds russet potatoes
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg
  • Butter for greasing the tray
  • 4 ounces Gruyere or cheddar, finely grated
  • Chives, optional for garnish

Preparation

  1. Preheat oven to 375°F and grease a muffin tin or baking tray with butter

  2. Cook bacon in a skillet until crispy, then drain and chop into pieces

  3. Thinly slice the potatoes using a mandoline or sharp knife

  4. In a small bowl, mix salt, pepper, and nutmeg

  5. Layer the potato slices in the greased tin, adding chopped bacon and grated cheese between layers, and sprinkle with the seasoning mixture

  6. Pour heavy cream over the stacks until nearly covered

  7. Bake for 40-50 minutes or until potatoes are tender and the top is golden brown

  8. Remove from oven, let cool slightly, and garnish with chopped chives if desired
